Breadfruit in coconut milk
Ingredients:
- 1 almost ripe breadfruit
- 2 cans coconut milk
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper (optional)
- 2-3 tablespoons of sugar (optional)
Instructions
1. Peel and boil breadfruit for 15 minutes until soft.
2. Add coconut milk and salt, pepper (optional) and sugar (optional).
Serve with fried fish.

Boñelos Lemmai (Lemmai Donuts)
Ingredients:
- 1 whole lemmai (breadfruit)
- 1 can coconut milk (bright)
- 1/2 cup sugar
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
Instructions
1. Peel the skin on the lemmai and remove the seeds, if any.
2. Cut into six slices. Soak the lemmai slices in water for a half hour. Drain out the excess water and add 1 tablespoon sugar, 1 teaspoon salt and 1 can coconut milk. Boil until soft. Remove from the heat and cool off. Blend the lemmai until smooth.
2. Mix all the dry ingredients, 1 cup flour, 1/2 cup sugar and 1 tablespoon baking powder.
3. Flour your board and roll.
4. Place in fryer 350 degrees Fahrenheit .
5. Finished when golden brown.
Serve with chocolate, pancake or maple syrup.
